ABOUT

Santuário Sul was founded by Luiz Paulo Dias Pereira in 2015 to challenge global perceptions of Brazilian coffee through experimental processing and broader cultivar selection. Alongside traditional varieties like Yellow Bourbon, the farm now grows more than 30 exotic cultivars. Progressive farming practices, including shade_grown coffee and innovative drying methods, have helped create new flavour profiles. Since its inception, Santuário Sul has placed four times in the Brazil Cup of Excellence, including a standout 2nd place in 2021 for Luiz’s naturally processed Yellow Bourbon, scoring 90.14. It’s a clear reflection of his dedication and pioneering approach, and we’re proud at Seven Seeds to work with Luiz and the Carmo Coffees team.

This lot is made exclusively from the Sudan Rume variety, a natural mutation of Bourbon. Its origins trace back to Sudan, near the Ethiopian border in what is now Boma National Park—one of the few places where Arabica still grows wild. Although pure Sudan Rume is rarely grown commercially due to low yields, it remains an important genetic resource for new hybrids. We’re excited to offer a coffee with such rare provenance, supported by the ideal growing conditions at Santuário Sul. This harvest stood out in cupping as one of the finest Sudan Rume examples we’ve tasted from Brazil. With its distinctive history and aromatic profile, it will feature in our Brazil offering as an espresso roast throughout April–May 2026.
