ABOUT
Finca Cedro Quemado is located in the mountainous province of San Ignacio, Cajamarca. Roger Quispe grows Caturra, Typica, and a small amount of Catimor on the 14 acres of land he purchased 20 or so years ago. Harvest is always a busy time of year which takes place between the months of April and November, a fairly lengthy stretch compared with most harvest periods of around 3 months. This is due to the slow ripening of cherries which makes for great complexity and depth of flavour, but slow going if you happen to be a picker! This lot has been processed using the washed method and we’re finding loads of sugary sweetness, and crisp citric acidity. The ultra-refined, squeeqy clean finish is a testament to Roger Quispes’ hard work, and desire to improve.
This lot is a stunning example of one of our favourite varieties showcasing extremely high clarity, and exquisite complexity. Safe to say this kind of coffee is what Seven Seeds is all about. As we enter our fourth year purchasing from Roger Quispe, it’s clear to us that his clean and precise Caturra harvest has the ability to win over almost every coffee lover we know.
